Sweet Potatoes with Apple Butter

Sweet potatoes with apple butter, lemon juice, seasoning, and butter.

Cook Time: 30 minutes

Ingredients:

  • 4 medium sweet potatoes
  • salt and pepper
  • 2 tablespoons lemon juice
  • 1/3 cup spiced apple butter
  • 1 tablespoon butter

Preparation:

Wash and cook sweet potatoes in boiling water just until tender, about 20 minutes. Remove skins and slices 1/4-inch thick. Grease a baking dish and place a layer of sweet potatoes in it; sprinkle with salt, pepper, lemon juice, and a thin layer of apple butter. Repeat until all ingredients are used. Dot with butter. Bake at 325° for 30 minutes.
Serves 4 to 6.

"I didn't follow the recipe to a T, I ended up using about 2/3 of a large jar of apple butter instead of the scant amount the recipe calls for, but this was SO delicious and ridiculously simple. The spices in the apple butter complement the sweet potatoes perfectly. I baked for about 20 minutes, then added marshmallows to the top and baked another 10 minutes or so. Wonderful addition to the original recipe."
