- 2 pounds yams or sweet potatoes
- 1 lemon (juiced)
- 2 tablespoons maple syrup
- 2 tablespoons unsalted butter
- 1 teaspoon salt
- Optional: white pepper or fresh ground black pepper (to taste)

Gather the ingredients. Preheat oven to 375 F.

Add the lemon juice to a mixing bowl with a quart of cold water.

Peel the yams and cut into 2-inch chunks. Toss them in the lemon-water mixture as you work to prevent discoloration.
