Sweet Potato Puffs

Ingredients:

  • 2 lbs sweet potatoes, cooked -- mashed
  • 1/3 cup orange juice
  • 1 egg -- beaten
  • 1 tablespoon grated orange peel
  • 1/2 teaspoon ground nutmeg
  • 1/4 cup chopped pecans

Preparation:

In a bowl, combine mashed sweet potatoes with orange juice, egg, peel, and nutmeg. Mix well. Spray a baking sheet with nonstick cooking spray. Spoon potato mixture onto baking sheet in 8 mounds. Sprinkle the mounds with the chopped pecans. Bake in a 375 degree F. oven for about 30 minutes, or until hot in the center.
Serves 8.

Something Horribly Wrong, Member erkreiss

I tried the recipe. I followed the recipe to the letter. The only uncommon thing I did was to use the white variety instead of the usual orange. However, all I could taste was bitterness. It's possible that the orange peel was bad. I tested all the other ingredients and they were fine, also the orange under the peel was fine. Another side note, I do not think the result very puffy. It's more like Sweet Potato Pile or Sweet Potato Blob. While these aren't very flattering my taste buds concur. Sorry, I would rather give a good review.
