Tomato Zucchini Skillet

Cook Time: 10 minutes

Ingredients:

  • 1/2 cup sliced green onion
  • 1 clove garlic, minced
  • 1 teaspoon vegetable oil
  • 1 teaspoon sugar
  • 1 small bay leaf
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 pounds zucchini, unpeeled, sliced 1/2-inch thick
  • 3 tomatoes, peeled and each cut in 8 wedges

Preparation:

Directions for tomato and zucchini recipe. Cook onion and garlic in oil until onion is tender. Add sugar, bay leaf, salt, pepper, and zucchini. Cover and simmer for 10 minutes, stirring occasionally. Add tomatoes; heat through. Remove bay leaf before serving tomato zucchini recipe. Tomato zucchini recipe serves 8 to 10.

"If you have a garden overflowing with tomatoes and zucchini, this is the recipe! I didn't have any bay leaf, so I used cumin and turmeric instead. I also added one roughly chopped cooking onion, and cooked that in the oil, adding the spices near the end. Then I added 2 rashers of bacon, diced, and cooked that. Then I added the zucchini and some red peppers from my garden. When the zucchini was cooked, I added some of my fresh tomatoes, and sprinkled on some parsley. The tomatoes made a nice sauce, and a bit of flour or corn starch would a been a nice touch too. I picked the zucchinis 2 days ago, and went out yesterday and there was one that was about 2 feet long.......... I have to figure out what I am going to do with that one!"
