Tomato Zucchini Skillet

  • 1/2 cup sliced green onion
  • 1 clove garlic, minced
  • 1 teaspoon vegetable oil
  • 1 teaspoon sugar
  • 1 small bay leaf
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 pounds zucchini, unpeeled, sliced 1/2-inch thick
  • 3 tomatoes, peeled and each cut in 8 wedges


Directions for tomato and zucchini recipe. Cook onion and garlic in oil until onion is tender. Add sugar, bay leaf, salt, pepper, and zucchini. Cover and simmer for 10 minutes, stirring occasionally. Add tomatoes; heat through. Remove bay leaf before serving tomato zucchini recipe. Tomato zucchini recipe serves 8 to 10.

what to do with zuccini?, Member grumred

I have a bumper crop of zuccini in my garden this year and am always looking for new ways to cook it. This was pretty simple and easy. They did not include a step of adding a little water to the zuccini as it's cooking, but I did and it worked out well. The bay leaf adds a nice flavor and the water could be substituted with beef broth for a richer flavor.
