Tomatoes with Green Chiles

Cook Time: 3 hours

Ingredients:

  • 2 gallons skinned ripe tomatoes
  • 6 jalapeno peppers
  • 4 large onions
  • 4 green bell peppers
  • 3 pieces garlic
  • salt to taste
  • seasoning to taste
  • 1/4 teaspoon baking soda

Preparation:

Puree tomatoes in blender or food processor. Set aside. Chop up all seasoning into small pieces; add to tomato puree. Season to taste. Put in a large pot and turn heat to high. When ingredients come to a boil, add baking soda. Reduce heat to simmer. Simmer at least 3 hours, or until thick. Let cool. Put tomatoes with green chiles in food storage bags, seal, and freeze.
