Easy Broiled Tomatoes

Ingredients:

  • 8 large fresh tomatoes
  • salt
  • 1 tablespoon prepared mustard
  • 3 tablespoons finely chopped onion
  • 1 cup soft fresh bread crumbs tossed with 2 tablespoons melted butter
  • fresh chopped parsley

Preparation:

Wash tomatoes and cut off ends. Halve tomatoes crosswise. Arrange tomatoes, but sides up, in a baking pan sprayed with non stick cooking spray. Sprinkle with salt then spread with mustard. Top with chopped onions and buttered bread crumbs. Arrange rack in lowest position of oven. Broil tomatoes on lowest rack of oven for about 8 to 12 minutes, until hot and golden brown.
Serves 8.
