Marinated Tomatoes

Ingredients:

  • 5 large ripe tomatoes
  • 1/4 cup good quality olive oil or vegetable oil
  • 1 1/2 tablespoons fresh lemon juice
  • 1 small to medium garlic clove, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano leaves
  • 1/8 teaspoon pepper

Preparation:

Peel tomatoes and cut in 1/4- to 1/2-inch slices; arrange in a large glass bowl or dish. Combine remaining ingredients. Pour over tomatoes. Chill thoroughly, gently stirring once or twice.
Serves 6.
