Southern Scalloped Tomatoes

Easy tomato casserole with bread and cheese, along with bacon and seasonings.

Cook Time: 45 minutes

Ingredients:

  • 1/4 cup butter
  • 1 cup bread cubes
  • 1 med. onion
  • 4 strips bacon
  • 2 tbsp. sugar
  • 2 1/2 cups cut-up tomatoes
  • Dash Tabasco
  • Dash sweet dried leaf basil
  • Crushed saltine crackers, for topping
  • 1 cup shredded Cheddar cheese

Preparation:

Melt butter in skillet; add bread cubes and brown lightly. Add more butter if needed and lightly brown onions. Fry bacon in another skillet; drain bacon and crumble into the butter and bread mixture. Add sugar, tomatoes, Tabasco, and basil; mix together to blend well, then spoon into 2 quart casserole dish. Cover with crushed crackers. Bake at 350° for 30-45 minutes. Add cheese on top last 15 minutes.

"I made this because I had a lot of tomatoes from my garden and was looking for recipes to use them, and this turned out very, very tasty! I did make some changes: a) I had no bacon so I didn't use any, but it still came out delicious. It would probably be outstanding with the bacon, though; b) I used only one-and-a-half teaspoons of sugar (raw brown sugar), not the 2 tablespoons called for. I think this worked really well, otherwise it would have been too sweet; c) I stirred in some vegetarian soup powder to the onion-tomato mixture, and a few crumbled bouillon cubes might work just as well; d) I did not use 1/4 cup butter, but just enough to saute the onions and the bread cubes, and that worked just as well. Last but not least, my garden tomatoes are organic, and the other ingredients I used (bread, onions, dried basil) were also all organic. Yum! Thanks for posting this simple and wonderful recipe! :o)"
