Chopstick Tuna Casserole

This simple, old fashioned tuna casserole gets its name from the chow mein noodles in the casserole. Potato chips can be substituted for the chow mein noodles.

Yield: Serves 4

  • 1 can (10 1/2 ounces) condensed cream of mushroom soup
  • 1/4 cup water
  • 2 cups chow mein noodles, divided, or use coarsely crushed potato chips
  • 1/4 cup chopped onion
  • Dash of pepper
  • 1 can (6 1/2 to 7 ounces) tuna, drained and flaked
  • 1 cup sliced celery

Heat the oven to 375° F. Grease an 8-inch square baking dish.

In a large bowl combine soup and water; add 1 cup of chow mein noodles, onion, pepper, tuna and celery; toss lightly. Turn mixture into the prepared baking dish. Sprinkle remaining 1 cup chow mein noodles over top.

Bake for 30 minutes.

Makes 4 servings.
