Hot Tuna and Egg Salad Rolls

Hot tuna sandwiches are baked.

Ingredients:

  • 1 can (7 ounces) tuna, drained and flaked
  • 4 pimiento-stuffed olives, sliced
  • 4 ounces Cheddar cheese, shredded or cut in small cubes
  • 4 hard cooked eggs, chopped
  • 1/3 cup mayonnaise
  • 3 tablespoons sweet pickle relish
  • 2 tablespoons finely chopped onion
  • 1/4 teaspoon salt
  • 8 hot dog rolls

Made with simple ingredients (things I normally have on hand anyway), this is a great sandwich for a quick party on a cold day. Yum! Warm and fun. I had to make a dairy-free version so omitted the cheese (cheese substitutes exist but aren't worth the wrapper they come in) and though the cheese would have crowned the experience perfectly and made the sandwich a little more satisfying, it was still good and I would make it again. Baguettes or flatbread would work nicely in place of the rolls. Egg tip: If you're in a hurry and don't have hard cooked eggs on hand, but do have a microwave, just spray four custard cups or coffee cups (should be same size and weight) with cooking spray, break one egg into each cup, poke the yolk, and microwave at half power for about 90 seconds (1.5 minutes). If the eggs aren't solid, continue cooking in 10-second intervals. A toothpick inserted in the yolk should come out clean. Remove from cups and refrigerate for 5-10 minutes to cool.
