Tuna Bisque With Cheese

Tuna bisque is hearty enough to serve as an entree with a salad and bread or crackers.

Ingredients:

  • 1 large can (12 ounces) tuna, drained
  • 1 tablespoon butter
  • 1/2 cup minced onion
  • 1/4 cup minced green bell pepper
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 3 cups milk
  • 1 cup grated Cheddar cheese
  • dash cayenne
  • 2 teaspoons diced pimiento or roasted red pepper
  • 1 to 2 tablespoons sherry, optional

"The only way I ever knew of to use tuna was to mix it with Miracle Whip and make sandwiches of it. This recipe broadens my use of this healthful and low-cost source of protein. It is very tasty and easy to make! When I make it next time I'll add more butter and cook the onions & peppers more thoroughly. They were a bit too crunchy in the soup when I made it the first time."
