Turkey Noodle Casserole

Turkey noodle casserole recipe with noodles, cooked diced turkey, cream of mushroom soup, Cheddar cheese, curry powder, and seasonings.

Ingredients:

  • 1 package (10 ounce) frozen peas, thawed under cool running water
  • 2 cups diced cooked turkey (or ham)
  • 1 1/2 cups cooked noodles
  • butter
  • 1/4 cup chopped onion
  • 8 ounces sliced mushrooms
  • 1 can (10 1/2-ounce) cream of mushroom soup
  • 1/2 cup milk
  • salt, to taste
  • 1/4 teaspoon curry powder
  • 1/2 teaspoon poultry seasoning
  • 1 cup shredded Cheddar cheese

Preparation:

Combine turkey, noodles, and peas in a buttered 2-quart baking dish or casserole. Melt 2 tablespoons butter in a saucepan. Sauté onion and mushrooms until tender; blend in soup, milk and seasonings and cook, stirring, until well blended and hot. Pour soup mixture over the turkey and noodle mixture; top with shredded cheese. Bake in a 350° oven for about 25 to 30 minutes, until hot and bubbly.
Serves 4.

"I tried this receipe because my husband and I LOVE currey. I had some leftover jalapeno turkey breast that I needed something to do with. The only things I did different was I used corkscrew pasta instead of noodles because that is what I had on hand. And also being such currey lovers, I doubled the amount of currey powder. May triple it next time. (That's how much we love currey!). This is a wonderful way to use leftover turkey. Thank you so much for sharing this!!"
