Ingredients:
- 2 cups finely chopped celery
- 1 small onion, finely chopped
- 2 tablespoons vegetable oil
- 4 cups chopped cooked turkey
- 2 tablespoons lemon juice
- 4 hard-cooked eggs, sliced
- 1/2 cup slivered almonds
- 1 jar (2 ounces) chopped pimiento, drained
- 1 can (10 3/4 ounces) condensed cream of mushroom soup
- 1/2 cup mayonnaise
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 cup crushed potato chips
Preparation:
In a skillet over medium heat, saute the celery and onion in vegetable oil for about 2 minutes, until just tender. Combine the sauteed vegetables with the turkey, lemon juice, eggs, almonds, and pimiento. Combine the soup, mayonnaise, and salt and pepper; stir into the turkey mixture until blended.
Spread the turkey mixture in the prepared baking dish. Top with the crushed potato chips. Bake for about 25 to 30 minutes, until hot and bubbly.
Turkey casserole serves 8.
