Turkey and Corn Fajitas

Easy turkey and corn fajitas, from our forum.

Ingredients:

  • 1/2 cup corn kernels, cooked
  • 1 medium onion, sliced into thin rings
  • 1 small green bell pepper, cut into thin strips
  • 1 clove garlic, finely chopped
  • 2 teaspoons olive oil 1/2 teaspoon ground cumin
  • 1 cup chunky salsa
  • 2 cups shredded cooked turkey
  • 4 8-inch flour tortillas
  • 4 tablespoons nonfat sour cream

Preparation:

In a 2-quart glass measure or casserole dish, place onion, bell pepper, garlic, oil and cumin. Cover with plastic wrap, leaving a vent, and microwave on HIGH 5 minutes. Add corn to onion mixture along with salsa and turkey. Cover with wrap and microwave on HIGH 4 minutes, or until very hot and steaming.

To heat tortillas, wrap them in a damp paper towel; microwave on HIGH for about 40 to 60 seconds, or until hot. Divide turkey and corn mixture equally among tortillas and top each serving with 1 tablespoon sour cream. Serve hot.
Serves 4.
