Cook Time: 55 minutes
Ingredients:
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- dash pepper
- 4 veal loin chops, about 3/4-inch thick
- 1/2 cup fine dry bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- 2 tablespoons olive oil
- 4 slices of Mozzarella cheese
- 1 green bell pepper, cut in strips
- 1 medium onion, sliced
- 1 can (8 ounces) tomato sauce
- 1/2 teaspoon dry leaf oregano, crumbled
- 1/2 teaspoon dry leaf basil, crumbled
Preparation:
Combine flour and seasonings; coat veal chops. Mix crumbs with Parmesan cheese. Dip chops in beaten egg then in the crumb mixture. Brown over medium-low heat in a large skillet in hot olive oil. Add sliced onions and green bell pepper the last 5 minutes of browning. Pile sliced vegetables over the veal chops. Place a slice of Mozzarella cheese over each chop. Pour tomato sauce over chops and sprinkle with oregano and basil. Reduce heat, cover and simmer for 45 minutes, or until meat is tender.
