Veal Cutlets in Mushroom Sauce

Cook Time: 1 hour, 10 minutes

Ingredients:

  • 1 cup finely crushed corn flakes
  • 2 eggs, slightly beaten
  • 2 tablespoons water
  • 2 pounds veal round, cut into serving size
  • pieces, pounded to tenderize
  • salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 cup milk
  • 1 can (10 3/4 ounces) condensed cream of mushroom soup

Preparation:

Put corn flake crumbs in a wide, shallow bowl. In another bowl, beat eggs with water. Season veal pieces with salt and pepper; dip into crumbs, then into egg mixture, then into the crumbs again.

In a heavy skillet over medium heat, heat oil and butter; brown veal pieces, turning to brown both sides. Transfer veal to a baking dish. Combine milk and soup; pour over veal pieces. Cover with foil and bake at 300° for 1 hour.
Serves 6.
