Gingered Beets with Raisins

Cook Time: 12 minutes

Ingredients:

  • 1 can (16 ounces) sliced beets
  • 3 tablespoons sugar
  • 2 teaspoons cornstarch
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 2 teaspoons lemon juice
  • 1/4 cup raisins
  • 2 tablespoons butter

Preparation:

Drain beets; reserve 3/4 cup liquid. In a saucepan combine sugar, cornstarch, ginger, and salt. Blend in reserved 3/4 cup liquid from beets and lemon juice. Add raisins. Cook over medium low heat, stirring, until thickened and bubbly. Add butter and sliced beets. Simmer until heated through, about 5 to 10 minutes.
Gingered beets recipe serves 4.
