The beauty of this salad is not only the flavor and vibrant colors, but
the fact that it can be made a day before serving.
Yield: Serves 6
Ingredients:
- 6 cups corn
- 1 1/2 cups chopped green bell pepper
- 1 cup chopped celery
- 1 cup chopped green onion, white and green parts
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon Tabasco sauce
- 1/4 teaspoon white pepper
- 6 medium sized butter lettuce leaves
Preparation:
Mix all ingredients and toss to combine.
Serve in butter lettuce leaves.
Best if made several hours ahead, and may be made a day before serving.
