Corn and Bell Pepper Salad

The beauty of this salad is not only the flavor and vibrant colors, but the fact that it can be made a day before serving.

Yield: Serves 6

Ingredients:

  • 6 cups corn
  • 1 1/2 cups chopped green bell pepper
  • 1 cup chopped celery
  • 1 cup chopped green onion, white and green parts
  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon Tabasco sauce
  • 1/4 teaspoon white pepper
  • 6 medium sized butter lettuce leaves

Preparation:

Mix all ingredients and toss to combine.

Serve in butter lettuce leaves.

Best if made several hours ahead, and may be made a day before serving.
