Vegetable Salad Mold

Vegetable salad recipe with curry mayonnaise.

Ingredients:

  • 1 pkg. (3-ounce) lemon gelatin
  • 1 pkg. (3-ounce) lime gelatin
  • 2 cups hot water
  • 1 1/2 cups cold water
  • 1/4 cup tarragon vinegar
  • 1 teaspoon salt
  • 1 1/2 cups shredded cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped celery
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 3 red radishes, thinly sliced
  • 1/4 cup chopped green onions
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons sweet relish
  • mixed salad greens
  • .
  • Curry Mayonnaise
  • .
  • 1 1/2 teaspoons curry powder
  • 2 tablespoons milk
  • 1 1/2 cups mayonnaise

Preparation:

Dissolve lemon and lime gelatins in hot water; stir until dissolved. Add cold water, vinegar and salt; chill until mixture is partially set. Add vegetables and sweet relish to thickened gelatin. Pour into 2-quart ring mold or an 11x7x2-inch baking dish. Chill until firm, then unmold on salad plate or platter; garnish with mixed salad greens and serve with Curry Mayonnaise. Serves 8 to 10. For curry mayonnaise, combine curry mayonnaise ingredients and blend well.
