Doc's Green Bean Salad

A tasty vinaigrette dressing flavors these fresh cooked green beans.

Ingredients:

  • 1 lb green beans; fresh, sliced lengthwise (French Cut)
  • boiling salted water
  • 1/4 cup green bean cooking water
  • 3 tablespoons vinegar
  • 3 tablespoons vegetable oil
  • 2 medium onions thinly sliced
  • 1/2 teaspoon dried dill seeds
  • 1 teaspoon sugar

Preparation:

Cook the cut green beans in boiling salted water until just tender. Drain the beans, reserving 1/4 cup of the cooking liquid. Prepare sauce by combining vinegar, oil, reserved vegetable stock, onions, dill, and sugar; stir until blended. Pour mixture over beans; marinate several hours before serving.
Yield: 4 Servings
