A tasty vinaigrette dressing flavors these fresh cooked green beans.
Ingredients:
- 1 lb green beans; fresh, sliced lengthwise (French Cut)
- boiling salted water
- 1/4 cup green bean cooking water
- 3 tablespoons vinegar
- 3 tablespoons vegetable oil
- 2 medium onions thinly sliced
- 1/2 teaspoon dried dill seeds
- 1 teaspoon sugar
Preparation:
Cook the cut green beans in boiling salted water until just tender. Drain the beans, reserving 1/4 cup of the cooking liquid. Prepare sauce by
combining vinegar, oil, reserved vegetable stock, onions, dill, and
sugar; stir until blended. Pour mixture over beans; marinate several
hours before serving.
