Ingredients:
- 2 cups red delicious apples, cored and diced, unpeeled
- 1/4 cup pineapple juice or apple juice
- 3 cups brown or white rice, cooked and cooled
- 1 cup chopped celery
- 1 cup chopped walnuts
- 1/2 cup raisins
- 1/4 cup shredded carrots
- 3/4 cup vanilla or plain yogurt, low-fat
- 3/4 cup mayonnaise
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
Preparation:
Directions for Waldorf salad In mixing bowl, combine apples and juice. Add rice, celery, walnuts, raisins and carrots; stir to blend all ingredients. In separate bowl, combine yogurt, mayonnaise, salt, and cinnamon; stir to blend. Stir mayonnaise mixture into apple mixture. Cover and refrigerate Waldorf salad until ready to serve.
