Butternut Squash Cornbread

Butternut squash is one of my favorite fall vegetables, and the number of ways to use it in recipes is endless. The squash can be used instead of pumpkin in just about any recipe calling for chopped or mashed pumpkin, or simply cook it and mash with a little brown sugar and maple syrup for a fabulous side dish.

Butternut squash has a tough exterior, so peeling can be a challenge. I find a y-peeler makes peeling relatively quick and easy.

Store fresh butternut squash in a cool dry place, and it should keep for up to 1 month.

For a simple and tasty dish, cut an unpeeled fresh butternut squash in half lengthwise. Scoop out seeds and arrange the squash, cut side up, on a foil-lined baking sheet. Dot with butter and sprinkle with a little brown sugarm maple syrup, or honey and a light sprinkling of cinnamon and nutmeg. Cover with foil and bake at 375° for about 45 minutes, or until the squash can be pierced easily with a fork. Scoop the squash out and mash with butter, salt, pepper, and spices, if desired.
