Baked Squash With Brown Sugar and Peanuts

This makes a great fall side dish with just about any meat or poultry main dish.

INGREDIENTS:

  • 2 acorn squash or other small winter squash
  • 3 tablespoons brown sugar
  • 3 tablespoons butter
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon cinnamon
  • dash nutmeg
  • 2 to 3 tablespoons chopped peanuts

PREPARATION:

Heat oven to 350°.

Cut squash in half lengthwise and scoop out seeds; score the insides lightly with a sharp knife, but don't pierce the skin. Arrange squash, cut-side up, in a baking dish. Combine brown sugar, butter, corn syrup, cinnamon, and nutmeg in a small saucepan. Bring to a boil; remove from heat. Brush cut side of squash all over with the mixture then spoon the remaining mixture into each squash half. Place pan in oven and add about 1/4-inch of hot water to the pan. Bake for 60 minutes, basting several times.

Baste again and sprinkle with the chopped peanuts; bake for about 10 to 15 minutes longer, or until nicely glazed and browned.
Serves 4.
