Crumb Cakes

Crumb cakes are baked in muffin cups.

Cook Time: 25 minutes

Ingredients:

  • Topping:
  • 2/3 cup all-purpose flour
  • 1/2 cup light brown sugar, firmly packed
  • 1/4 cup finely chopped pecans
  • 1 1/2 teaspoons ground cinnamon
  • 5 tablespoons chilled butter, cut into small pieces
  • .
  • Crumb Cakes:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 3/4 cup granulated sugar
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup milk

Preparation:

Prepare topping. Mix together 2/3 cup flour, brown sugar, chopped pecans, and cinnamon. Cut in cold butter with a pastry blender until coarse crumbs have formed. Set topping aside.

Prepare cakes. Mix together 2 cups all-purpose flour, baking powder, salt, and nutmeg.

In a large mixing bowl, mix together granulated sugar, melted butter, eggs, and vanilla. Stir until well blended. Alternately stir flour mixture into the sugar mixture. Spoon batter into greased or paper-lined muffin cups, filling about 2/3 full. Sprinkle topping evenly over batter, pressing topping into cake batter slightly.

Bake cakes at 350° for about 20 to 25 minutes, or until a toothpick comes out clean when inserted in center of a cake. Cool for about 5 minutes on a rack in pan, then remove to cool completely.
