Marble Cake With Chocolate Frosting

Marble cake is made with chocolate and vanilla batters, baked in a loaf pan.


  • 1/3 cup shortening
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 cups cake flour
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2/3 cup milk
  • 3 egg whites, stiffly beaten
  • 1 ounce unsweetened chocolate, melted
  • 2 tablespoons hot water
  • 1/4 teaspoon soda


Cream shortening and sugar; add vanilla. Add sifted dry ingredients alternately with milk. Fold in egg whites. combine melted chocolate, water, and baking soda; add to half of the batter, stirring gently until blended. Alternate light and dark batters by spoonfuls into a greased and floured 4x8x3-inch loaf pan. Bake at 350° for 65 to 75 minutes, or until a toothpick inserted in center comes out clean. Cool and frost with Creamy Chocolate Frosting (below).

Creamy Chocolate Frosting

  • 1/4 cup water
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla
  • 2 ounces unsweetened chocolate, melted
  • 2 to 2 1/2 cups confectioners' sugar
Heat water and butter; add vanilla and melted chocolate, blending well. Sift 2 cups of the confectioners' sugar into the mixture; beat to spreading consistency, adding more confectioners as needed.
