Fruit cocktail cake recipe with coconut topping.

  • 1 can (16 ounces) fruit cocktail, undrained
  • 1 1/4 cups light brown sugar, unpacked
  • 3 tablespoons shortening
  • 3 tablespoons butter
  • 2 eggs
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla

  • 1/2 cup flaked coconut
  • 1/2 cup chopped maraschino cherries

"I made this cake many years ago (or a similar version) and had lost the recipe. When I found this one I was thrilled -and it was just as I had remembered it from the 70's- moist and absolutely yummy! I'll pass this one on to my daughter-in-law since my son loved it when he was little and still will now, I'm sure."
