This old-fashioned cottage pudding makes a great everyday dessert or snack. Serve this cake-like pudding with your favorite warm dessert sauce.

Yield: 6 to 8 Servings


  • 4 tablespoons butter
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla
  • 2 1/4 cups all purpose flour
  • 4 teaspoons baking powder
  • pinch salt


In a mixing bowl with electric mixer, cream butter and sugar until light and fluffy.

Beat in egg until blended.

In another bowl, combine the flour and baking powder. Beating slowly, add about 1/3 of the dry mixture to the creamed mixture, along with half of the milk. Repeat with another 1/3 of the dry mixture and the remaining milk, then add the remaining dry mixture, beating thoroughly.

Pour into a greased and floured 8-inch or 9-inch square baking pan. Bake at 350° for about 30 minutes, until firm and a toothpick inserted in the center comes out with only a few crumbs clinging. Serve with dessert sauce.

I loved this cake growing up,, Member katieintn

but my grandmother's cake was a white cake. I wonder if she only used eggs whites in it. I'll try this recipe to see how it turns out.
