Ingredients:
- 4 to 6 small zucchini squash, about 1 1/2 pounds
- 1 medium sweet onion
- 2 cloves garlic, smashed and minced
- 1 teaspoon dried leaf basil
- dash Cajun seasoning, optional
- 1 cup chicken broth
- juice of 1 lemon, about 2 to 3 tablespoons
- 1 can (14.5 ounces) diced tomatoes with juice
- salt and pepper, to taste
