Zucchini Casserole
If you're looking for a great tasting zucchini casserole, this recipe is an excellent choice.


  • 2 medium zucchini, unpeeled, sliced in 1/4-inch slices
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, sliced
  • 1/2 red bell pepper, sliced
  • 2 tomatoes, sliced
  • salt and pepper, to taste
  • garlic powder, to taste
  • basil and oregano, about 1/4 teaspoon each
  • 6 ounces shredded Cheddar cheese


Preheat oven to 350°. Butter a 2-quart casserole. Arrange zucchini slices in casserole. Top with onion slices, green and red pepper slices, tomato slices, then sprinkle with herbs. Top with cheese. Bake for 50 to 60 minutes. Serves 6.

I was looking around the internet for a zucchini based side dish to go with pork chops and came across this recipe. It was WONDERFUL! I sliced all of my veggies (except tomatoes) and put them in a gallon size ziploc bag - added pepper/garlic powder/salt and shook it up to coat the pieces evenly. I then poured it all in the buttered dish and topped with thinly sliced tomatoes and tucked fresh basil from my garden under the tomato slices, sprinkled with dried oregano and topped with cheddar cheese. I HIGHLY recommend what another reviewer suggested - cook some cornbread and soak up the juices with it when you eat it! It was seriously the most delicious recipe! I signed up just to comment this!!! Can't wait until my garden comes it to be able to use all fresh garden veggies in this next time!
