Hi all, we have so much zucchini this year, and they are growing so big. This recipe was easy and both my husband and I liked them. I have 2 questions. Can you shred the zucchini up and drain in the refrigerator. If so for how long? I would like to do some up days ahead. Or mix the batter ahead of time. The other question, how big is to big, before the zucchini is no good. This is my first year of growing zucchini and some of them are huge....
