Zucchini Recipes

Too many zucchini? Shred some of your extra zucchini to use in bread, cakes, or meatloaf, make relishes or pickles, or cook as a side dish or in a main dish casserole. Here are some of my favorite zucchini recipes.

Zucchini Pancakes

These tasty little pancakes are made with fresh zucchini and Parmesan cheese, along with basil for extra flavor. Plan to let the shredded zucchini drain for an hour or two to get as much moisture out as possible. Serve as an appetizer with a dip or chili sauce, or serve as a side dish with grilled meat or poultry.

This simple casserole is a great way to take advantage of prolific zucchini and summer squash.

Zucchini and Green Tomato Relish

I used the coarse grind of my stand mixer's grinder attachment to make this sweet relish. This is a great relish for hot dogs or burgers, and it's a good way to use extra green tomatoes and zucchini. Finely chop the vegetables if you don't have a grinder.
