Easy Baked Chicken Quarters

Thanks to the person who recommended to cook this dish on convection at 425 for 30 minutes. This really worked out nicely. I didn't have chicken quarters on hand but used boneless, skinless chicken breast. The chicken came out delicious, very moist and full of flavor - will definitely keep and use this recipe again.

I'm not much of a cook and it's starting to bug my husband, so I'm always on the look out for easy yet tasty meals I can make. This was a big hit. Normally, when I bake chicken it never browns nicely and the flavor is bland because I don't really know how to use spices. This was a HUGE hit and my husband and nephew (who doesn't like anything) loved it and went back for seconds. This gave me the flavor of restaurants that I always wondered how to get and it was so easy. The olive oil (at least I guess it was the olive oil) gave it a beautiful brown color. I was impressed with myself! Thanks to this website and recipes like this my husband will no longer be complaining about my cooking (LOL!!!) Please keep the recipes coming!

Put this recipe together as listed in a few minutes and produced a dinner with excellent results. They only thing different I did was to use use my convection oven. Put the oven on ""covention roast"" at 425 and baked for 30 minutes. Will definately make this again.
