Baked Herbed Potatoes

This is a good starter recipe but, definitely pretty bland if not tweaked. First off I cut the potatoes and diced some onions. I then put those in a pan. I topped with olive oil spread with added sea salt and some garlic(fresh or garlic salt works). Instead of baking I threw it on the grill with some aluminum foil on it. About 10 minutes before they were done, I cut a hole in the aluminum foil to draw some of the smokiness taste into them..They were absolutely wonderful! FANTASTIC. These are always a hit when we are grilling!!!!!!!!!

This is an okay basic recipe. If you don't know what to do with a potato, this is a place to start. First thing I did was use olive oil instead of butter, then I put the herbs on. I sprinkled it with fresh ground pepper and put a squeeze of fresh lemon on it. I also used a couple of cloves of fresh crushed garlic on the layers. It wasn't fab, but certainly edible. I needed a way to use up some elderly potatoes, and this fit the bill.
