I put that I would recommend this to others, but only if they tweak the recipe just a little. What caught my eye about this recipe is that it is made in a way similar to my Mamaw's banana pudding. As I couldn't find her recipe, I decided to try this recipe instead. For starters, I did substitute vanilla wafers for graham cracker crumbs. That part was fine. The recipe calls for 1 tablespoon of cornstarch. I wound up using 2 and still it wasn't quite as thick as it should be. I probably could have put close to 3, if not 3 tbsp. exactly, and that might have gotten it thick enough. The pudding recipe calls for 2/3 cup of sugar. Too sweet! Even my ten year old son thought so. I think 1/2 cup would suffice! I used a 9x9 dish (so about 2qt), and while the pudding covered adequately, the meringue did not. It was spread sort of thin. The two egg whites called for did not make enough meringue. In my opinion, a little too much meringue is better than too little! I like to make some peaks after spreading the meringue on, and the amount in the recipe didn't allow for that. Granted, I could have used a smaller dish but how much smaller should one go with banana pudding? Overall, it isn't a horrible recipe. Just needs tweaked a little!
