Southern Red Beans & Rice

I did the overnight soak way, dumped soaking water, added back 4 cups of chicken stock and 2 cups of water and ended up with a lot of liquid. It made bean soup. However, it was delicious bean soup. Also note I used turkey smoked sausage and it was great and lower calorie. Go easier on the hot stuff.

I made some changes. I added more celery and less onion and I also threw in a can of mild Rotel to the mix. I didn't have the necessary spices but the Rotel seem to do the trick. I used a chicken/turkey sausage from Trader Joe's to add a healthy alternative. Great dish and cheap too!

I just got back from New Orleans, where I enjoyed all of the local fare. This recipe compared wonderfully to the Louisiana version of this dish. To be super healthy, I prepared it with organic adzuki beans and served it over organic brown rice. It turned out lovely. And, as I always do, I doubled the amount of onions, garlic, celery, parsley, and spices called for. Very tasty.

I have tried many red beans recipes, but this one was the best. My beans were very tasty. My family and I can eat these beans daily many times over. Thank you for the recipe. Bubie

I live in the south and I have never tasted red beans so darn hot I was making this for my family and now we can't eat it because its hotter then any chili I've ever made cut the red peppers down to 1/4 and the cayenne to1/4 you can always make it hotter now I spent several hours that is waisted along with my dinner and the food itself unless you have a way to take out the hot hot

This is a great example of red beans and rice! My mom used to make red beans with sausage and ham the time when I was a kid. This is a splendid recipe that was very easy, with quick clean up. I soaked the beans for a couple hours, did the saute part, and then threw it all in a crock pot with the spices for 5 hours. It was delicious. Thank you so much!

I too used canned beans although in the future I'll most likely use dry. (or two cans) I also included bell pepper and some left over sausage (polish I think). Next to impossible to mess up.

Ever making red beans and rice. The recipe was really easy to follow. I used can beans instead of dry beans (to save time). I also added bell peppers. I would definitely recommend this recipe.
