Kale and White Bean Soup

Have taken liberties with the recipe - but it always works. Use all the veggies (except I've never added the tomatoes because I generally don't like them together with red peppers), but I think you can substitute any white beans ( I like dried home-cooked limas best) any soup liquids, chicken broth, beef broth, coconut milk (as 1/2 portion of liquid) all delicious. My boss loved it, my club loved it, my family loved it. One lady said it had too much kale, but ate it all anyway. Good way to get healthful greens in your diet.

This is definately a keeper! However, I did make a few changes. Since the only canned beans I ever eat are pork n beans or corn, I opted to make mine in a crock pot, using navy beans instead of the northern. I just put everything in the crock pot (except the meat and kale) and when everything was almost done, I added my cooked sausage and I sauted my kale before adding since I wasn't sure how kale would come out after cooking that long in a crock pot. I also added some chicken bouillion cubes for more flavor and red pepper flakes. I also did not have any smoked sausage so I used ground italian sausage. I'm glad I found this recipe as I am an advent soup lover. Will definately put this in my favorite.
