Great flavorFebruary 09, 2009 By Yosyellowgrand
I used strips of pork chops instead of beef, since that's what I had on hand. I used the thick chops from Costco (2). I brined the chops for 30 minutes (mix 1/2 cup plus 4 tablespoons Morton Kosher salt in 2 quarts water and place chops in solution for 30 minutes, then rinse chops and pat dry ). I then split the chops in half because they were so thick , then cut into 1 inch strips. I used Clamato juice for the tomato juice. I used canned mushrooms, which I usually hate, but they tasted just fine. I let the stroganoff simmer for about 30 minutes as there was no need to simmer pork for 2 hours. I served it over egg noodles. Yummy!

This tasted wonderful and was very easy to make. My husband liked it and doesn't usually get excited about stroganoff.
