Kirk's Muscadine Wine

This is the second season I have made this recipe. The first season, I had a bit of an accident - during the first siphon after the initial fermentation, someone came to my front door and I forgot about the siphon. When I went back to the kitchen, 2/3 of my wine was on the floor! I bottled the remainder and because there was so little left, I didn't do the second fermentation period. The result was an extremely tasty, slightly sweet and fruity tasting wine. The alcohol was not overwhelming. It was delicious and I was heartsick thinking of the spilled wine!!! Everyone who was blessed enough to get a taste absolutely loved it. This last season, I made it to through the 2nd fermentation. The resulting wine is less sweet with more of an alcoholic taste, but it is very smooth and light. It goes well with cheese & crackers and fruit. While both seasons were good, I think I prefer the first that was a bit sweeter. I'm not a big drinker, but I do like an occasional glass of wine, and I tend to like the unoaked, lighter & fruitier whites like D'Oro by Reunite. So, in conclusion, I give this Muscadine recipe 5 stars on behalf of those like me who prefer a lighter taste. You can make it sweeter by skipping the 2nd fermentation, or go for the gusto and wait the additional 6 weeks. Either way, you'll get a really nice tasting wine.

this is easy and the best i've ever tasted way better than the stores and the winery could put out it was also all my friends favorite to dont let this one slip by thanks again allen
