This was great. Exactly what I was looking for. I do agree that onion powder might be better for my ""texture tastes."" I was aiming to recreate the homemade mac and cheese of my youth, and my mom happened not to use onions. I live in Germany these days, and we can't get true *sharp* cheddar here, so I added some emmental to the mediocre cheddar we can get, and that worked out well. Also, I used storebought breadcrumbs that are really meant for frying...I may also make my own next time. Thanks for this one!

I agree with another rater in that there isn't a good ratio of pasta to sauce. The dish tasted bland to me. Although not a big fan of Martha Stewart, she has a really good mac and cheese recipe that beats this one (just my opinion :).

I made this recipe last evening and it was a hit! Here are the alterations in this recipe that made it a hit: 1) Double the roux recipe 2) Eliminate the onions and add 2 Tbs. onion powder 3) Add sliced tomatoes on top (or not) 4) Use 1/4 cup breadcrumbs for topping and include shredded cheddar to make a lovely crust on the top. This recipe is not messy. Just make sure you are not in a hurry as this is Southern cooking, not microwaveable food.

This recipe is messy and time consuming. The proportions are totally off. You need to double the macaroni and 1/2 the breadcumbs and butter at the end. Tastes good, but won't be making it again.

Theis recipe took a while to make. It was good to eat but wasn't worth all of the work and ingrediants. It's flavor didn't pop. The kids don't like onions so eliminate them and they liked it.

I first made this recipe in 2005 for my then-boyfriend. He mentioned a craving for Mac and Cheese. The recipe was a hit! I have been making it at least once a month ever since, sometimes more often, and we still love it. We're engaged now and getting married at the end of 2008; I don't know if it was this Mac and Cheese, but with the creamy sauce and a wonderful blend of spices I'm sure this only helped. :) P.S. I like to add a package of frozen or lightly steamed brocolli to the mix before the oven step for a bit extra nutrition, and decrease the calories and fat by decreasing the butter to 3 tablespoons, and omit the crumbs and butter mixture step.

I love this recipe, its simple and yummy... I use 2 1/2 cups milk and a 1/2 cup beer..... Instead of breadcrumbs I use wheat thins..... I love the cheddar beer flavor and the crackers make it extra crispy and add a complimentary taste. I love making this and my husband and I eat the whole thing in one sitting every time.........
