    Blueberry Coffee Cake--Positively delicious!March 04, 2012 By ronnielj
    Tried this recipe this morning--was moist & tender with lots of flavor! I only had/used one egg. And I used 1/2 cup of milk and 1/2 cup of buttermilk. The cake baked in exactly 35 minutes. I cooled for 10-15 minutes before cutting...didn't pose a problem. My husband loved it! Comment: When I put the first layer of batter into my baking dish, it seemed like it wasn't enough...same thing when I did the second layer. Low and behold, it was just perfect! So have no worries if you encounter the same situation. Side note: When making sweet treats and the recipe calls for greasing the baking dish, I use butter sprinkled with sugar. I put about 1/8 cup of sugar into the buttered dish, then swish it around until sides and bottom surfaces are covered. Adds a little something extra!

    i baked this up quickly and easily. i did add a sprinkle of sugar and cinnamon on the top as suggested in another review and really liked that addition (i did keep the lemon peel). i lowered temp too 350 for most of cooking. then raised it to 370 for fear i would mess that up. no worries. it was awesome! the cake part was light and tender. the flavor was delicious! we had it for dessert but can't wait to have for breakfast tomorrow. this would be good with raspberries!! i will make this again. i forgot the drizzle of icing and was still great! a very light cake. my husband wanted two servings.

    Since finding this recipe a few months ago, I have made this at least 20 times. My 3 toddlers absolutely love it and gobble it up. It's so easy to make. I use fresh bluberries and it turns out perfectly every time.

    My cake turned soggy when it cooled. Maybe frozen and not defrosted blueberries was the issue? The taste was great but it could not be used as a finger food. Shirley

    This blueberry cofffee cake won 1st place in the county fair 4-h food show. We dropped the oven temp to 350 degrees. We added cinnamon sugar to the top and omitted the lemon peel. She won outstanding of the day. Only 4 given out of 60 cookers. The judge took the recipe from her book to share. She went on to the State fair. This recipe can also be done with any fresh fruit. Strawberry, peach, plums, and raspberries. We made 12 different coffee cakes and this was by far the best.

    I made this recipe before going to work one morning it was quick, easy and my coworkers ate every crumb. I will definitely make this again!

    i substituted 1/2 cup whole wheat, 1/3 less sugar with 1/3 more flour and topped with slivered almonds and fresh berries. everyone loved it and it was a healthier alternative to traditional cakes. i probably could have used even less sugar as its pretty sweet.

    This cake does not use electric mixers so it can be made while people sleep, watch TV, or read. I made it in a 9"" square pan and baked for an extra 5 - 10 minutes, until the top looked done. Very fruity, almost like a pie filling in the middle. Also, uses a limited amount of fat. Everyone loved it.

    I made this coffee cake this weekend and took it to work and they raved about it and they all said it was delicious. And one of the girls wanted the recipe. And i gave it to her so she can make it also. It was very easy to make. And i personally would make it again.

    I needed to make a coffee cake for my Sunday School Class. I had a lot of frozen buleberries in the freezer and wanted to use them. I saw this recipe. It was very easy to make.It was delicious and everyone liked it. I wil make this again!
