Apple Bars

These are a great use for extra apples - even better because you don't need to peel them. I didn't use any nuts, and I didn't roll them in powdered sugar. They were very sweet on their own. I probably would shred the apples with my food processor next time, for more even distribution in the dough. Also, cover the bars for the last 15-20 minutes of baking with a sheet of foil to prevent over-browning. Great when served warm with a cup of coffee!
