    overall, this recipe was disappointing. There was not enough liquid in it. When I tried mixing it up, it was like powder. I didn't have lemon zest, so in order to up the liquid in the recipe, I added more lemon juice and some lemon extract. All in all, I probably added between 1/8 to 1/4 cup additional liquid. I didn't measure it as I went, so I'm not sure how much exactly. With all the additions, the cookies did taste great. Crunchy and quite lemony. Also, I'm not sure greasing the pans was necessary. I did grease the 1st two pans, and the cookies did not want to stick to them. The third pan I didn't grease, and they stuck much better. I didn't have a problem getting them off the pan either. There is probably enough butter in the recipe to make greasing the pans unnecessary. Either I will keep looking for a lemon spritz recipe that is better, or I will keep this one and tweak it again.
