Boiling carrots for 25 minutes in 1 cup of liquid makes carrots surrounded by liquid. It doesn't evaporate into a glaze. I did everything right: 1 pound baby carrots. Brought to a boil and boiled 25 minutes uncovered. To fix my carrot soup, I ended up taking out the carrots, adding 1 tablespoon of corn starched dissolved in 2 tablespoons water to the mix, and then re-mixing in the carrots when it thickened like gravy. The corn starch gave the liquid a sheen that made them look actually glazed. I'm pretty proud of my fix, but since it completely changes the original instructions, I'm giving this recipe 1 star.

These were awesome. I used big carrots that I peeled and cut up instead. Instructions were dead on. I only wish I had made more!

I was looking for a side dish to pair with meatloaf since I didn't have any potatoes. This recipe jumped out at me and was simple to make. Turned out absolutely wonderful - hubby was surprised at the dish since I have never made this, and we both really enjoyed them. Would make again for sure.

I thought this recipe was great. I had a bag of baby carrots in the fridge andI wanted to surprise my family with something different,so I googled this recipe. Wow these are great and totally easy to do. I did add a bit more sugar and butter though. I added them as a side to sour cream mashed and NY strip steak. They were definately a success, and I felt like I had mastered a chefs seceret recipe. Thanks.

I'm not sure how someone can give a recipe a rating with a drastic change in the ingredients. I tried a glazed carrot recipe with just a tiny bit of orange juice in it, and I could taste it over the carrots. So making it with ALL orange juice and then saying it's just OK seems hardly fair. There should be a section for reviewers who follow the recipe exactly and another section for those who change it. This is a great recipe as is!

I julienned the carrots, added raisins during the boil and sliced almonds at the end. Delicious also the next day as leftovers. I'm making it again now, with raisins, almonds, and ginger.

alright so at the beginning of this recipe I was skeptical..... probably because I have never carmelized carrots before..... I was kinda mad actually. Thinking to myself ""why would you put so much water in here!"" haha.. well... thats why I don't write recipes :) after making it and realizing the water went down I did as mentioned.... It is amazing...(of course I taste tested for 2 men)..... which LOVED them.... thank you so much :) only thing is that it is very sweet.... but thats why you only have a lil at a time...

I used canned carrots instead of baby carrots and it only took about 20 minutes to make. My husband loved it. And now asks for it almost once a week now.

I made these a couple of days ago & loved them! I served them with braised chicken thighs, saffron rice and corn on the cob. I took the advice of the first reviewer and added a little more sugar, but I am sure they would be wonderful just the way the recipe is written. I don't usually cook carrots alone as a side dish, but this makes me want to eat them more often! I would think it's a great way to get kids to eat them too. Thanks for the recipe!

This was easy and tasted oh sooo good. The only thing I changed is I added 1/2 cups of brown sugar instead of the 1/3 it called for. My son likes sweet stuff. He came back for more.
