Easy Chicken Parmesan

We just made this recipe and it's 105 degrees here in Sacramento. Since it's skillet-only, there's no need for an oven (also cuts down on dishes). All of kids (ages 3 to 9) loved this, as did the adults. We made it very quickly (good when you don't know what you're making until the last minute). We used more of the cheeses AND the sauce (as the other reviewer suggested) - turned out GREAT!

The chicken is really tender, the kids love it and this is so, so easy. We have this with a high-fiber pasta and a steamed vegetable. I always find that it needs more sauce than recommended, as we use the sauce with the melted cheese for the pasta. Yum!
