THe recipe was very easy to make and was great. However, I plan to cut the curry in half the next time and like the other reviewer move away from the cream of coconut. The sweetness & curry were a bit overpowering. Otherwise, it was great and did pair very well with the rice and greens.

I think the dish overall was good. However I would have added some carrots and or green peppers and I felt the sauce was TOO sweet and next time I would use coconut milk and just 1/4 cup of the coconut creme. I usually have that on hand for other dishes,

This recipe produces a real treat, for minimal effort. I allowed a little under an hour, start to finish, without hurrying. Try it with any rice (I used wild rice), a green salad with some type of Caesar or vinaigrette dressing, and a nice bottle of dry white wine, and you have a very special meal. And you can easily make enough for a second meal, or for very unusual and tasty dip with the leftover sauce. This one's a winner! Note: cream of coconut, not the same as coconut milk, is often available in the Mexican foods section of a supermarket, since Goya is one of the companies that offers it.
