I absolutely love this recipe!!!! I have tried many and this is close to perfection! It will be filed away in my recipe file as a keeper. This is so creamy. The best I've ever had <3!

Recipe is very good as is. I made a few tweaks to it though. I substituted non-fat half and half for the milk. Also added a splash (maybe 3 T) of sherry to the broth. Seasoning was salt, a dash of nutmeg and a dash of cayenne pepper. Really perks the dish up! Since we are not pimento fans, I sauteed a little sweet onion with the mushrooms instead. Dish freezes well and scales up or down quite nicely.

Made this casserole when my picky grandkids were here and they just loved it. They told me to make it again and give the recipe to their dad. I did add some onion and broccoli to give it some color. Also, used shredded cheddar instead of parmesan. I will diffinetly be making this again.

Good plain chicken disk. Probably a good dish to serve children. I would make again but add things like peas or something else to perk it up a bit.

I couldn't find pimentos on the supermarket shelves here in Australia. So to add a bit of flavour I put in some chopped spring onions (green onions I think they are called in America) when I was sauteeing the mushrooms. All the family gave it the thumbs up, but to my taste, it was a little bland. I'd make it again, but I would add another cup of mushrooms and more spring onions. I'm thinking some chopped red pepper would be nice too.

Made this for my picky family and they loved it. My 5 year old loved the noodles. My 8 year old loved the chicken. The rest of us loved it all. I substituted 1/4 cup chopped green onions for the pimentos (they would never touch pimentos) and it gave it a little color and tasted great too. You won't be disappointed.

I personally found this recipe to be a bit salty even though I used only 1 1/2 tsp salt instead of 2 BUT my three teens (including one who professes to ""hate"" chicken) and husband loved it and told me it is a keeper!

This chicken dish was an excellent choice for a weeknight dinner. It had an excellent taste, was very filling, and was easy to make. My two teenage daughters and husband loved the dinner and everyone had seconds. The chicken noodle casserole, along with a simple salad, makes a great meal. I will serve this dish again.
