Mexican Chicken Casserole

The sauce was ok before I added the second can of cream soup. Then it was too heavy. The tortillas were mouchy, not good at all. It would be at least better dipping the chips into the sauce with only 1 can of cream of chicken and less taco sauce, even better without the taco sauce and just the taco or mexican seasoning spice.

Here's what I did, the family LOVED it. Heat oven to 350 degrees. Cook and cube 4 boneless chicken breast halves. Season with salt and pepper. Sauce: 2 cans cream of celery soup 1 15 oz can diced tomatoes 1 can whole green chiles, diced 1 pkg taco seasoning 1 tbsp chicken buillion 1 15 oz can black beans 1-1/2 cups instant rice, uncooked 1/2 cup chicken broth 1 cup salsa (Herdez mild or medium) Topping: 1 cup extra sharp Cheddar cheese Garnish: Tortilla chips Sour cream Preparation: Combine ingredients for sauce. Line bottom of casserole dish with beans and rice. Add chicken. Add sauce. Top with grated cheese. Bake at 350° for about 25 min until bubbly and hot. Place handful of tortilla chips in each serving bowl, spoon casserole over chips and serve immediately with a dollop of sour cream. Serves 4.

I also used only 3 chicken breasts, a can of diced tomatoes, and corn tortilla chips (and all the other called-for ingredients). Very good! 350 for 20 mins was perfect. We're going to do this one again!

I used three chicken breats since they were large. I also in addition to the tomatoes added 1/2 cup green chile sauce, this made a creamier sauce. I used the Doritos the first time but did not feel it added much flavor and they of course were no longer cruchy. The second time I made a box of Rice-0-Roni mexican rice and put it in the bottom instead of the chips and ate the chips as a side item. Next time I think I will put some mexican corn in as well.

I made it but it just wouldnt turn out ! I tried over and over again multipule times but it just wouldnt work! I didnt know how long to bake it and so I kept my eye on it for awhile and it wouldnt work! I finally got it close and it lasted Ok. If I figure out how long to bake it , I might bake it again!

My husband and I tried the recipe last night. It is incredibly easy to make and we had a delicious dinner in no time. All we added was a sprinkle of fresh cilantro which gave it a different dimension. We ate second helpings and would definitely make it again!

I made this casserole for a family get to gather one night and everyone just loved it. It is very simple to make and ingridents mix perfect with each other. Will have again soon.
