This is our all-time favorite recipe in our house! It is a little time-consuming...but, well worth the wait! The only way I changed the recipe is to use an entire pound of bacon and more shredded parm (broiling for a few minutes until the top is crusty). I also use whole wheat rotini noodles instead of egg noodles. Amazing! :)

My family liked this recipe...but I changed a few things. I cooked fresh spinach with chopped garlic first. I used a vidalia onion instead of green onions. I sauted a chopped red bell pepper with the onion. The pepper gave it a nice flavor. I used heavy cream for the sauce. Then I served it over orzo pasta instead of rice or egg noodles. It was a big hit, but I will add more salt to my spinach next time.

Loved this, with minor changes. Used fresh spinach, tossed and wilted in reserved bacon grease. Yum. Used real garlic, minced, instead of garlic powder. Did not add butter, but cooked the onions and seasonings in bacon grease. Result was plenty rich and plenty tasty.

This is a HORRIBLE dinner. I followed the directions completely and it turned out horribly. The spinach gets to soggy and overall it tastes awful. I wouldn't suggest it to anyone!

This was a delicious casserole. I added a Tablespoon of lemon juice to brighten the flavors and sauted some mushrooms with the onion. My 3 1/2 year old and 14 month old loved it. They didn't even know they were eating spinach. I served it over brown rice and used olive oil instead of butter. It was wonderful and I will be making it again very soon.

I did this in the crockpot and it turned out GREAT. Only adjustments I had to make was to double the pepper, add more garlic powder (but then I love garlic), and cut the cream in half. Keep the broth the same. I didn't use the salt; with the bacon it had enough and I really can't imagine it tasting good with more. Cook on HIGH for about an hour, long enough to melt the cheese.

I have made this recipe twice now, and my husband cannot get enough! The bacon adds a depth of flavor that cannot be described. After I cooked the chopped bacon, I left the bacon grease in the pan while sauteeing the onions and other ingredients. I would recommend cutting up an onion for the recipe and not substituting the minced dried onions--it does not compare. I will be making this for my family many more times in the future!
