I Baked a chicken and like always it was to much. I live alone and I don't have my growing boys to eat up everything anymore. I did not want to throw the chicken away. So I thought what would my mother do""make chicken salad"". I don't like chicken salad so have never made it, so I looked online and found this recipe. Long story short, I now Love chicken salad. It is good for sandwiches or just with crackers when I come home after work with a glass of wine. I am making it today.

I used this recipe for my first time making chicken salad. This is a well seasoned, fantastic tasting sald that I use for making sandwiches. I have made it several times. My husband, who is a lover of well seasoned food, loves this and has no problem eating it up!! It's definitely a keeper. I won't be using any other chicken salad receipe. This one is perfect just the way it is!
