I've made this several times with only a couple of changes. First - I used 2 or 3 chicken breasts (instead of 1 cup chicken). Second - I thickened the soup with a mixture of cornstarch and water. Also sour cream is a nice option when serving for folks who don't like spicy food (although it is not too spicy in my opinion). I have had several friends ask for the recipe. It's a keeper!

I made this soup for a Cinco de Mayo party in 2007 and it has been a family favorite and crowd pleaser ever since. It's so easy! You probably already have most of the ingredients right now. We're not a super spicy bunch, so I haven't tried the jalapeno pepper yet. But, I do cut up a little avocado and add it just before serving, and I use tortilla chips from a bag - no one has complained yet!

The chicken tortilla soup was very simple to make and VERY good. I bought a couple of pre-cooked (roasted) boneless chicken breasts and used both of them; I also used a whole can of corn and a whole (small) jalapeno pepper and a LOT of cilantro, all things that you can adjust to taste. We used purchased corn tortilla chips, which we broke into pieces and added to the soup, along with Mexican blend shredded cheese, after it was served. It was delicious! I'll make it again very soon and will send the recipe to my sister. My husband loved it, too.

I made it and garnished it with store-bought tortilla chips and cheese. It is wonderful. I will certainly make it again and I will pass the recipe on to my friends and family.
